A good stir-fry with Asian flavors. Though peanuts are traditional, other nuts are good. I like walnut and almonds with this. If you don’t have oyster sauce on hand you can use teriyaki sauce. Vegetarian oyster sauce can replace regular oyster sauce.

1 T vegetable oil, regular sesame if you have it
1 – 2 garlic cloves, minced
1 t peeled, finely chopped or grated ginger
1/4 t crushed red pepper flakes, or to taste
2 T oyster sauce
2 T rice vinegar
3 – 4 T broth, stock, or water
1/4 c finely chopped peanuts
1/4 t sugar
3 c sliced or chopped zucchini or summer squash

1. Heat oil in a large skillet. Add garlic, ginger, and red pepper flakes. Cook, stirring, for a minute, until fragrant. Add remaining ingredients except zucchini. Bring to a simmer.

2. Add the zucchini and sauté, stirring often, for 4 -5 minutes, until crisp-tender. Serve hot or at room temperature.
