Almost magic, the way the zucchini that seems to be everywhere in your house disappears.

zucchini, peeled if you like

1. Chop  zucchini. Put in food processor and puree until quite smooth.

2. Measure out 1 or 2 cup portions and put in freezer bags or containers and freeze.

3. Use for bread, soups, stews, stocks…OR

4. Melt some butter in a skillet, add some chopped garlic and saute for a minute or so, do not let brown. Add zucchini puree and stir and toss for 2 or 3 minutes until tender. Add some salt and pepper, fresh herbs, even nutmeg.

Easy.
