If you have a Vita-Mix or other heavy duty blender, you can just put everything it it as is. If you’re using a food processor, grind the sesame seeds in a coffee grinder first. Salting the zucchini is optional, but if you have half an hour to spare, it’s worth doing.
2 c zucchini, chopped
1 t salt, optional
1 T olive oil, plus extra if needed
3 T lemon juice, plus extra if needed
3/4 c hulled (white) sesame seeds
2 garlic gloves
1 t paprika
1/2 t salt
1. Place the chopped zucchini in a colander set over a bowl or the sink and sprinkle with salt. Toss gently and let sit for half an hour. Rinse quickly and dry with a dish cloth.
2. Put all the ingredients in a blender or food processor and puree to desired consistency. Taste. Add additional olive oil and/or lemon juice if you like. Serve as you would regular hummus.
