Another way to use up zucchini…
4 c cubed (peeled) zucchini
1/4 c sugar
1 t ground cinnamon
1/2 t ground nutmeg
1/4 c lemon juice
2/3 c packed brown sugar, or to taste
1/2 c rolled oats
1/2 c flour
1/3 c cold butter, cut into small pieces
1. Preheat oven to 375ºF. Butter an 8-inch square baking dish.
2. In a bowl, combine the cubed zucchini, 1/4 c sugar, cinnamon, and nutmeg. Add the lemon juice and mix well. Scrape into buttered baking dish.
2. For topping, combine brown sugar, oats, and flour in a bowl; cut in butter until crumbly. Or place in the bowl of food processor and pulse until crumbly. Sprinkle over the zucchini mixture. Bake for 40 to 45 minutes until zucchini is bubbling and the topping is browned.
