1 T butter, or use all olive oil
1 T olive oil, or use all butter
2 or 3 zucchini
1 large tomato or a handful of cherry tomatoes
fresh dill, basil, or parsley (or dried)
salt and pepper, to taste
grated Parmesan cheese, optional
1. Slice zucchini into rounds, (and then into half moons, if you like). Melt butter and oil in a skillet. Add zucchini and saute over medium heat, stirring occasionally until tender and the zucchini are beginning to brown a bit.
2. Chop up the tomato and add to zucchini. If using cherry tomatoes, throw them in whole. (If using dried herbs, add them now.). Saute a bit longer until the tomato warms through or even longer until the tomato starts to get a bit saucy (the cherry tomatoes will begin to collapse.)
3. Add fresh, chopped herb(s), salt, and pepper. Serve, sprinkled with Parmesan, if you like.
