1 to 2 zucchini, not too large, coarsely chopped
1 to 1-1/2 c plain yogurt
1 clove garlic — (or more)
1 T lemon juice
2 T fresh parsley, dill, mint or basil, or 2 t dried
salt and pepper, to taste
1. Just blenderize or food process the whole lot and serve. It’s great on baked potatoes.
