…or buttermilk. The flavor of the dressing is enhanced with fresh herbs, though this is still excellent with dried herbs. You can also sub mayo or sour cream for the yogurt; you may want to thin either of those with some milk or water.

2/3 c plain yogurt
1/3 c apple cider or other vinegar (red wine vinegar will give a pinkish hue)
2 T extra-virgin olive oil
1 T (Dijon) mustard
1 T lemon juice
1 clove garlic, crushed or minced
1/2 t dried herb–dill, basil, oregano…or 1 to 2 T chopped fresh herb
1 T soy sauce; or salt, to taste
ground (black) pepper, to taste

1. Combine all the ingredients in a bowl or a jar and whisk or shake until well blended. Whisk or shake again before using.
