This is delicious on whole wheat pasta!
3 T extra-virgin olive oil
1 T chopped garlic
1/2 c chopped onion or leek
1/4 t crushed red pepper flakes, or to taste
3 c chopped tomatoes, fresh or canned
5 c peeled, shredded or cubed winter squash
salt and pepper, to taste
Parmesan or Romano cheese
fresh chopped parsley, for garnish, optional
1. Heat olive oil and garlic in a skillet. When the garlic is fragrant, add the onion and red pepper flakes and cook for about 5 minutes, stirring occasionally.
2. Add tomatoes (along with their juice, if canned), squash, salt, and pepper (check the salt content of the canned tomatoes first). Cook, stirring now and then, and breaking down the tomatoes with a wooden spoon, until the tomatoes are somewhat saucy and the squash is tender. You may need to add some liquid. Taste for seasoning.
