To make fresh breadcrumbs, put 2 slices fresh bread in a food processor and pulse until crumbly. Measure and, if necessary, pulse another slice or two to make the required amount for the recipe. You could also just process any number of slices and freeze the remainder for later use.

4 c coarsely chopped (peeled) turnips
1 c applesauce
4 T butter, melted, divided
1 – 2 T sugar, optional
1 t  salt
1/2 t black or white pepper
1 egg, beaten
1 1/2 c fresh bread crumbs

1. Cook turnips in boiling water until tender. Drain, cool, transfer to a bowl and mash.

2. Preheat oven to 350°F. To mashed turnips, add applesauce, 2 T of melted butter, sugar, if using, salt, pepper, and beaten egg. Mix well. Put in a 1 1/2 to 2 quart baking dish.

3. Mix breadcrumbs with remaining 2 T of butter. Sprinkle over turnip mixture. Bake for half an hour to 45 minutes, until heated through and a little bubbly.
