This will make 6 patties, from a 1/4 cup each of mixture.
1 1/3 c diced (peeled) turnip
1 c diced (peeled) potato
2 T finely chopped onion
1 egg, lightly beaten
1/4 c all-purpose flour
salt and pepper, to taste
vegetable oil, for frying
1. Bring a large pot of water to the boil. Salt if you wish. Add turnip and potato cubes, and cook until they are tender, about 15 minutes or so (the cooking time will depend on the size of the pieces). Drain well. Let cool some.
2. In a bowl, mash the turnips and potatoes. Stir in the onion, egg, flour, salt, and pepper.
3. Coat the bottom of a heavy skillet with about 1/4-inch of the oil. Heat over medium-high heat until the surface of the pan just begins to shimmer, but not smoke. Scoop 1/4-cups of the mixture into the pan, flattening them into 1/2-inch thick patties with a spatula. Fry the patties until they are golden, turning them once, about 4 minutes a side. Transfer to a plate lined with paper towels to drain of excess oil.
4. Serve with sour cream, applesauce, ketchup….
