A new take on tuna salad! Chard stems are a good substitute for celery in many dishes. You can make this into a ni├žoise-like salad by omitting the mayonnaise and using about 1/3 c or so of olive oil, to taste, plus extra vinegar. If adding extra chard greens, you may need to increase the dressing ingredients.

1/2 c mayo
1 t Dijon mustard
1 T balsamic vinegar
1/4 c chopped kalamata olives, or other black olives
2 6-oz cans of tuna, drained
1 c chopped chard stems
2 c chopped chard leaves, or more, if you like
1/4 – 1/2 c chopped fresh parsley
1/2 c chopped scallions
salt and pepper, to taste

1. Combine mayo, mustard, and vinegar in a serving bowl. Stir in olives, tuna, chard stems, chard leaves, parsley, and scallions. Add more dressing ingredients if needed. Add salt and pepper. Taste for seasonings.
