The feta cheese really makes this salad.

1 (3-lb) piece of watermelon
2 large tomatoes
1 c crumbled feta (about 4 oz)
2/3 c fresh cilantro, minced, or basil, parsley
2 T extra virgin olive oil
1 T white wine vinegar or white balsamic, or champagne vinegar
salt and pepper, to taste

1. Remove rind from watermelon. Cut fruit into bite-size pieces and seed. Core, seed, and chop tomatoes into bite-size pieces.

2. Stir together watermelon, tomatoes, feta, cilantro or other herb, oil, and vinegar in a large bowl. Season with salt and pepper.
