Other nut butters are also good.
2 soft flour tortillas
1/3 c creamy peanut butter
6 tomato slices
salt and pepper, to taste
1. Spread the tortillas with the peanut butter and arrange 3 slices of tomato on top of the peanut butter on one half of each tortilla. Season with salt and pepper.
2. Fold the tortillas in half to enclose the tomatoes and peanut butter. Place one or both quesadillas in a large skillet (depending on the size of the skillet) and cook, turning once, until lightly browned on both sides.
3. To serve, transfer the quesadillas to a cutting board and cut them into wedges.
