If ever there was a dish to toast the end of summer, this is it. Recipe for Tarragon Vinaigrette follows, or use the best ready-made tarragon vinegar you can find.

4 large tomatoes, sliced into rounds, or chopped
3 large ripe, but still firm, peaches, peeled and cut into wedges
2 t fresh tarragon leaves or 1/2 t dried tarragon
1/2 c tarragon vinaigrette

1. Lay out the tomatoes and peaches on a serving platter or combine gently in a serving bowl. Sprinkle with the tarragon (fresh or dried).

2. Pour the vinaigrette over all. Chill for at least an hour, then serve.

Tarragon Vinaigrette:

3 T white wine or rice vinegar
2 t fresh tarragon leavesĀ OR 3 T ready-made tarragon vinegar
6 T olive oil
salt and pepper, to taste

1. Steep vinegar and tarragon leaves for 30 minutes. (Omit this step if using ready-made tarragon vinegar.)

2. Add oil, salt, and pepper to vinegar mixture and whisk together. Taste for seasoning.
