This relish or ‘salsa’ is good as a side with lamb, or over a bed of lettuces as a salad.
1-1/2 lbs tomatoes
1 large red bell pepper
1/2 c crumbled feta cheese
2 T balsamic vinegar
pepper, to taste
1. Wash, core, and finely chop the tomatoes. Wash, trim, seed, and finely chop the red bell pepper. Place chopped tomatoes and pepper in a serving bowl, then crumble in the cheese.
2. Mix in the vinegar and season with pepper.
