Here is a simple, fresh salsa to accompany most any dish. You can also stir this into a grain dish, toss it with pasta, or put on toasted slices of baguette for a quick crostini. The salsa is receptive to any number of spices, or spice mixes. Curry goes especially well.
3 T red wine vinegar
1 t salt, or to taste
1/2 t ground black pepper, or to taste
1 t curry powder, or other spice mix; or 1/4 t hot red pepper flakes, or to taste; optional
1 green bell pepper, cored, seeded, and finely diced
1 red bell or other sweet red pepper, cored, seeded, and finely diced
3/4 c finely diced sweet onion
1 minced garlic clove, optional
2 T fresh chopped herb
3 T extra-virgin olive oil, or other oil
1. Combine vinegar, salt, black pepper, and spice, if using, in a glass or ceramic bowl. Stir until salt has dissolved.
2. Add remaining ingredients and stir to mix. Taste for seasonings. Serve immediately or allow to marinate for a while before serving.
