Evocative of late summer, this salad really needs nothing else, save a dusting of sea salt and a grinding of pepper. Even that could distract from the flavors. If you like, drizzle with some oil and vinegar, or vinaigrette of choice. I like to eat this with my fingers, onion slice, tomato slice, green pepper ring–delicious!

sweet onion(s), peeled, thinly sliced
tomatoes, thinly sliced
green pepper(s), cored, thinly sliced, seeded
salt and pepper, optional
olive oil, optional
vinegar, optional
vinaigrette, optional
chopped fresh herb(s), optional

1. Arrange sweet onion slices on a platter. Top each slice with a tomato slice. Top the tomato slice with a green pepper ring. Add any of the optional ingredients, if you like.
