A delicious dressing, a little on the sweet side. Start with the lesser amount of sweetener and work your way up if you like. If using regular onions or red onions, you can soak them in cold water for 15 minutes, this will reduce their sulfurous quality.
1/2 c chopped sweet onion
1 T Dijon or other mustard
2 – 4 T honey or agave
1/3 c apple cider vinegar
3/4 c extra virgin olive oil, or other salad oil
1 T poppy seeds
salt and pepper to taste
1. Combine onion, mustard, honey, and vinegar in a blender or food processor and whizz until smooth, or keep a little chunky if you like. Add oil, poppy seeds, salt, and pepper and blend until emulsified. Transfer to a jar. Refrigerate any leftovers.
