Sweet Cherry Barbecue Sauce

You could use sour cherries too, though you might want to increase the sugar.

2 c pitted and halved fresh sweet cherries
2 T orange juice
2 T sherry
1 T sugar
1 t grated orange zest
3/4 t Dijon mustard
1/4 t salt
3 drops bitters, optional
1 T cold water
2 t cornstarch or arrowroot powder

1. Combine cherries, orange juice, sugar, orange zest, mustard, salt, and bitters, if using. Bring to a simmer, cover, and simmer gently 5 minutes.
