You can make this in a loaf pan, or in muffin cups. The baking time for the muffins will be about half the time as for the loaf. Start checking the muffins for doneness at about the 20 minute mark.
1/2 c vegetable oil or melted butter
1/2 – 3/4 c sugar
1 1/2 c sliced strawberries
2 c flour, whole grain or white, or a combination
1 t baking powder
1/2 t baking soda
1/2 t ground cinnamon
1/2 t ground nutmeg
1/2 t salt
1 c shredded coconut
3/4 c chopped walnuts or pecans
1. Preheat oven to 350°F. Grease and flour a standard loaf pan or muffin cups.
2. In a large bowl, beat the eggs until foamy. Add the oil or butter and sugar and continue beating until very well combined. Stir in the berries. Set aside.
3. In another bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Add to the berry mixture and stir to combine. Stir in the coconut, then fold in the nuts. Transfer to prepared pan.
4. Bake loaf for 50 to 60 minutes, though start checking at the 45 minute mark. Cool in pan for 10 minutes or so, then turn out and cool completely.
