Any berry is equally good here. Nice served with chocolate cookies or shortbread or put into a prebaked pie shell.

1 quart strawberries, hulled
1/2 c sugar, or to taste
3 T cool water
2 t gelatin
3 T almost boiling water
1 c whipping cream

1. Crush the strawberries some. Gently blend in the sugar and macerate for 30 minutes.

2. About 20 minutes later, put the 3 T cool water in a small bowl or cup. Sprinkle the gelatin over and allow to sit for 5 minutes. Put the almost boiling water in another bowl and pour the gelatin mixture into this. Stir to dissolve–the liquid will be clear. Stir this into the strawberries. Cool the mixture in the fridge. When the gelatin is about to set–it will be thick and syrupy (this could take anywhere from half an hour to an hour and a half)–whip the cream and gently fold in. Cover and refrigerate for about 4 hours.
