This dressing inverts the oil/vinegar proportions of more tradition salad dressings, producing a lighter mixture.

1/2 c white, white wine or rice wine vinegar
1/4 c extra virgin olive oil
4 T minced onion, or very finely chopped scallions or chives
1 clove garlic, crushed
1 t chili powder, or to taste
1/4 t salt

1. Combine all ingredients in a jar, cover and shake for a minute until well blended.
