3 large, ripe pears
1/2 c minced onion
1 small fresh chile pepper, seeded and minced, or 1/4 t red pepper flakes (or to taste)
1/4 c (golden) raisins
1/2 c light brown sugar, or to taste
1/2 c white wine vinegar or unseasoned rice vinegar
1/4 t ground allspice
1/4 t ground ginger
1/4 t ground coriander
1/4 t ground cloves
1/4 t ground cardamom

1. Peel, core and coarsely chop pears. Put in a medium saucepan over moderate heat. Add the remaining ingredients and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the pears and onions are soft and the liquid is syrupy, about 30 minutes. Remove from heat and let cool before serving.
