This dish is a good way to introduce people to spaghetti squash. It’s simple, tasty, and showcases spaghetti squash’s delicate flavors. If you have any cooked, drained greens add them–or cook some up for the dish.
1 spaghetti squash, cooked
1 c sour cream, ricotta cheese, cottage cheese, or yogurt
2 T chopped fresh herb(s), or 1/2 t dried herb(s)
salt and pepper, to taste
grated Parmesan or Romano cheese, for topping
1. Please see the Spaghetti Squash Casserole recipe for instructions on cooking squash and separating into strands.
2. Preheat oven to 400°F. Lightly grease an appropriately sized baking vessel. Combine all ingredients except grated cheese and transfer to prepared baking vessel. Sprinkle with grated cheese. Bake for about 30 minutes. If the top has not browned or hasn’t browned enough, you can put it under the broiler for a minute or two. Let sit some before serving.
