This is the best way to cook cabbage when you want to serve it for its own sake. Butter and onion enhance the cabbage’s sweetness. This also makes for a nice pasta topping.
2 T butter
1 medium onion, thinly sliced
2 1/2 c shredded cabbage
salt and pepper, to taste
1. In a medium skillet (with a lid), over medium-low heat, melt butter. Sauté onion until golden, about 8 minutes. If onion is starting to burn, turn heat down.
2. Add the shredded cabbage and toss to mix it with onion and coat it lightly with butter.
3. Cover the skillet, reduce heat to low, and let steam 8 to 10 minutes, until just tender. Season with salt and pepper and serve.
