These bake for over 2 hours.
4 firm apples
1/4 c honey
1 T lemon juice
1/2 c water or apple juice
1/2 t (freshly) ground nutmeg, or to taste
1. Preheat oven to 300ºF. Put an oven rack in the center of the oven.
2. (Peel), core and cut apples into 1/4-inch thick slices. Arrange slices in a 13-by-9-inch baking dish. (Don’t worry if they don’t fit in a single layer.) Drizzle honey over apples. Pour the lemon juice and the 1/2 c water or apple juice over them. Sprinkle with nutmeg.
3. Cover (with foil if the dish doesn’t have a baking lid) and bake in the center of the oven until the liquid boils and the apples begin to soften, about an hour. Remove the cover and bake until the apples are golden and tender, for about 1 to 1-1/2 hours more.
4. Serve warm or at room temperature with ice cream or frozen yogurt.
