You could just shred everything, or chop everything, but  it’s a nice combination of textures–shredded and chopped–along with a pleasing visual element…

2 c coarsely shredded turnips
1/2 c finely chopped red bell pepper
1/2 c finely chopped carrot
1/4 c sliced scallion
1/4 c chopped fresh herb or up to 1 T dried (dill is great here)
2 T olive or vegetable oil
1 T cider vinegar
1 t honey mustard or Dijon mustard
salt and pepper, to taste

1. In a large bowl, combine he turnips, peppers, carrot, scallions, and herb.

2. In a small bowl, whisk together the oil, vinegar, mustard, salt, and pepper. Pour the dressing over the salad and toss.
