This is a tasty variation of the Chinese dish. You can use any pasta you like here.

8 oz long noodles, such as udon, spaghetti, or linguine
4 c or so shredded Napa cabbage
1/3 c tahini or peanut butter
2 T roasted (dark) sesame oil
2 T soy sauce
2 T mirin or sherry
1 T rice vinegar
1/2 t red pepper flakes
chopped fresh cilantro, for garnish, optional

1. Cook noodles according to package directions.

2. Meanwhile, place shredded Napa cabbage in a colander over the sink.

3. Whisk together tahini or peanut butter, sesame oil, soy sauce, mirin, vinegar, and red pepper flakes in a saucepan. Gently warm or medium-low heat.

4. Drain noodles over cabbage in colander. This will wilt the cabbage. Transfer noodles and cabbage to a serving bowl. Stir to mix. Add sauce and toss until sauce is incorporated into noodles and cabbage. Sprinkle with cilantro and serve.
