Traditionally, sesame noodles are made with tahini, a sesame paste. Here ‘sesame’ refers to toasted (dark) sesame oil. This is good hot or at room temperature.

1 lb long noodles–somen, udon, spaghetti, linguine…
3 c kimchi, drained
2 T kimchi juice, or to taste
4 t toasted sesame oil
1 T rice vinegar or white wine vinegar
1 T sugar, optional
salt,  if necessary
2 scallions, thinly sliced, or chopped red onion, for garnish

1. Cook noodles according to package directions. Drain, then put into a large serving. bowl. Add kimchi, kimchi juice, sesame oil, vinegar, and sugar, if using. Toss to combine. Taste for seasonings, adding salt or more of the dressing ingredients if you think it needs it. Top with scallions or red onion and serve hot or at  room temperature.
