Totally delicious! It’s great as a salad dressing, over cooked grains or veggies, and also a wonderful sauce for poached, grilled or roasted meats, cooked beans, tofu, tempeh–I’ve even drizzled it over scrambled eggs.

In this recipe, you may want to add more water to use as a salad dressing, or more scallions and/or fresh, chopped herb to thicken it up for sauce, or not.

1 c finely chopped scallions
1 T finely chopped garlic
1 c chopped tomatoes, fresh or canned
2 T vinegar
3 T soy sauce
1/4 c water, or as needed
1 t sugar or other sweetener
1/2 t hot sauce, or 1/4 t red pepper flakes, or to taste
2 -3 T fresh chopped herb
ground black pepper, to taste

1. Combine all ingredients in a container, a bowl or a jar, for example. Adjust for consistency, if desired. Taste for seasonings. Store, covered, in the refrigerator.
