Leave green beans whole for a more elegant dish.
1-lb green beans, trimmed
1 T chopped fresh scallions or chives
1 T chopped fresh parsley
1 T butter
1 t stone-ground mustard
salt and pepper, to taste
1. Steam green beans, covered, 5 minutes or until crisp-tender. Remove from steamer; toss with remaining ingredients. Serve immediately or at room temperature.
