Green tomatoes can also be done this way.
1 T olive oil, or all olive oil
1 T butter, or all butter
salt and pepper, to taste
fresh, minced herb of choice, or dried herb
1. Remove the paper husk from the tomatillos and either slice or dice the tomatillos.
2. In a skillet heat the oil and butter until the butter is melted. Add the tomatillos and saute on both sides until tender and golden, about 6 to 8 minutes.
3. Sprinkle with salt and pepper and fresh or dried herb.
