2 T extra virgin olive oil
1 T butter, or use all olive oil
2 c fresh green beans, trimmed, sliced, if desired
2 T lemon juice
1 t lemon zest
salt and pepper, to taste

1. Heat the olive oil and butter in a skillet over medium-high heat. Add the green beans and toss, coating with the oil/butter. Add the lemon juice, lemon zest, salt, and pepper. Cook, stirring occasionally, for 5 to 10 minutes depending on how crunch and/or tender you want the beans. Taste a piece now and then until it’s done to your liking.
