This is one of my favorite salads; I eat it several times a week during the winter.
2 c sauerkraut, drained (reserve liquid, drink!)
1 1/2 c coarsely shredded carrots
1 c sliced or chopped dates; or raisins; chopped prunes; dried cherries; dried cranberries…
4 T oil, or to taste–flax, walnut, sesame, (not dark sesame oil), olive…
1 jalapeno pepper, (seeded) finely chopped; or 1/4 t red pepper flakes, or to taste (optional)
1. Combine all ingredients in a bowl and serve.
