I’ve surprised many people with the “secret ingredient” in this relish–sauerkraut! It’s really good on burgers and hot dogs, but I’ve also put it on meatloaf, and even mixed it up with pasta and cooked grains. It’s pretty tasty. You could also used kim chee here, in which case all you need to do is mix the kim chee with the salsa or chili sauce. This is best if made in advance–let it sit for at least 8 hours.

2 c sauerkraut, drained, (drink the liquid or put back into sauerkraut jar)
1/2 c finely chopped red onion
1/2 c grated carrot
3/4 c tomato salsa or chili sauce or pasta sauce or tomato sauce
salt and/or sugar, optional, to taste

1. Combine the sauerkraut, red onion, carrot, and salsa. Put into a covered container and refrigerate for at least 8 hours before using. However, it’s still good just made, too. Taste before serving and add some salt and/or sugar, if you think it’s needed for those among your clan that balk at the sour in sauerkraut…
