A great lunch salad, with bread; or top whole grain bread for an open-face sandwich; or serve with crackers as an appetizer…

The mayo is actually quite good, surprisingly–you don’t need much, as the sauerkraut or kim chee is already quite moist.

2 – 3 c sauerkraut or kim chee, drained (save the drained liquid–it’s tasty!)
1 1/2 – 2 c chopped or sliced ham
1 c (Swiss) cheese, coarsely grated; or other cheese
1 t caraway seed (for the kim chee–our sauerkraut has caraway already)
1 t  dried dill weed, optional
mayonnaise, optional

1. Mix all ingredients except mayonnaise together. Add mayonnaise, if using, and stir to combine.
