The sauerkraut gets a “kick” from the radish in this simple salad.
1 1/2 c sauerkraut, drained, if desired
1/2 c sliced radish(es)
1/2 c grated carrot(s)
1 T fresh parsley, chopped
2 – 3 T oil–olive, avocado, walnut, hazelnut…
1. In a bowl, toss sauerkraut, radish, carrot, and parsley with the oil. Serve at once.
