This is probably not a combination you’ve thought of, but it’s rather good. If possible, secure some of the fresh mozzarella balls, called bocconcini, or cut up some of the fresh mozzarella into cubes. You can use any cheese here, as well as any number of herbs. I’m including a vinaigrette recipe, though you can go with your favorite dressing.

6 – 8 c salad greens
2 c pitted, sweet cherries, halved, if you like
1 – 1 1/2 c mozzarella cheese balls, or cubed or diced cheese
1/3 – 1/2 c chopped fresh herb(s)
1 T balsamic vinegar, or your preference
1 T lemon juice
1 t Dijon mustard, or other mustard
1/2 t grated lemon peel
4 T extra-virgin olive oil
salt and pepper, to taste

1. Combine greens, cherries, cheese, and herb(s)

2. Combine the remaining ingredients and whisk or shake until emulsified. Add a good portion of the vinaigrette to the salad and toss to mix, adding more if you think it’s necessary. Or allow people to pour the dressing on their own portion.
