The amount of sour cream is really up to you–depending on how many radishes you use and how creamy you want this salad to be.
1 bunch radishes, roots only, cut into slices
2 hard-boiled eggs, chopped
2 or 3 scallions, sliced
1/2 c sour cream, or to taste
salt and pepper, to taste
lettuce leaves, optional
1. Mix sliced radishes, chopped eggs, and sliced scallions together. Mix in sour cream. Add salt and pepper. Serve in a lettuce leaf, or over lettuce leaves, if desired.
