No peeling, just a good wash and scrub.
1 to 2 celeriac bulbs
mild vegetable oil (safflower, corn, peanut…)
butter, salt, pepper, grainy mustard, soy sauce
1. Preheat the oven to 350ºF.
2. Wash and scrub celeriac. Leave skin on. Dry. Coat lightly with oil. Place in a baking dish; if using two celeriacs, make sure there’s plenty of room between them.
3. Bake, uncovered, until tender. This should be about an hour, but start poking them with a fork after about 40 minutes. They should be tender, but not overly soft.
4. Remove from oven and split lengthwise. Serve hot. You can mash a little butter into the baked celeriac, along with any of the other additions. In fact, butter, a few drops of soy sauce , and a bit of mustard are quite tasty.
