Very tasty. This dish can be made a few days in advance, and it can also be frozen! Reheat, gently, on the stove.
2-lbs plums, halved and pitted
1 c red wine
2 bay leaves
1/2 t ground cinnamon
2 whole cloves
1 star anise, or 1/2 t ground star anise, or 1/2 t five-spice powder
seeds from 4 cardamom pods or 1/4 t ground cardamom
1/4 – 1/2 c honey, or agave, to taste
1. Preheat oven to 325ºF. Choose a baking dish that will hold the halved plums in one layer.
2. Put the plums in the dish, cut side down. Put the remaining ingredients into a saucepan and bring to the boil. Stir now and then to dissolve the honey, if necessary. Pour over the plums, cover the dish tightly with foil or a lid, if the baking dish came with one, and bake for about an hour or until the plums are tender.
3. Serve warm or at room temperature with ice cream, creme fraiche, whipped cream, custard…Refrigerate any leftovers or freeze.
