A simple recipe with complex flavors. This is good as is, but sprinkling in some ground spice or spice mixture adds great depth of flavor.

3 c or so green beans, trimmed
vegetable oil
any ground spice or spice mixture, to taste, optional
salt and pepper, to taste
1 c grated Parmesan, Romano, or Asiago cheese
fresh chopped herb, for garnish

1. Preheat oven to 400°F. Line a rimmed baking sheet with parchment or foil, or not.

2. Combine the green beans in a large bowl with enough oil to coat, along with spice(s), if using, salt, and pepper. Toss to combine. Transfer to the baking sheet (or do this all on the baking sheet).

3. Roast for 10 minutes. Remove from oven and sprinkle the cheese evenly over the beans. Stir, if you like, to coat the beans. Return to oven and roast another 10 minutes, until the cheese melts and forms a cheesy crust on the beans.

4. Transfer to a serving platter, sprinkle with fresh chopped herb, and serve, warm or at room temperature.
