Another Vegephile favorite. Eat hot or at room temperature. Great for hors d’oeuvres.
garlic cloves, as many as you like
olive oil, to taste
salt, to taste
1. Preheat oven to 400ºF.
2. Wash and trim the green beans.. Peel garlic cloves, slice if large. Combine all ingredients in a large bowl and mix until all the beans are lightly coated with oil.
3. Spread on one or two large baking sheets and roast for about 40 minutes. Shake the pan a couple of times during roasting time. Roasting time will vary with the size of the beans. They are done when they have a somewhat wrinkled look and are beginning to brown in spots. Try one–if you like it, it’s done.
