1 c dry red wine
3/4 c sugar
1 three-inch cinnamon stick
2 whole cloves
1 three-inch strip lemon zest
2-lbs sweet cherries
1. Preheat the oven to 350ºF. Combine the wine, sugar, cinnamon stick, cloves, and lemon zest in a saucepan. Bring to a boil, reduce the heat, and simmer 5 minutes.
2.Stem and pit cherries and place in a shallow baking dish. Pour the syrup over the cherries and bake for 30 minutes.
3. Let the cherries cool a bit in the syrup. Serve warm, at room temperature, or chilled with ice cream, frozen yogurt or sweetened creme fraiche (or just as is).
