You can make this with other grains as well–brown rice, white rice, millet, barley…Cook the grains according to package directions or your own preference.

1 c quinoa
2 c water or broth
2 T olive oil
1 small onion, chopped
2 medium carrots, diced
2 cloves garlic, minced
1 medium bunch greens, trimmed, stemmed, if necessary, roughly chopped
1 1/2 T balsamic vinegar
1 T lemon juice
salt and pepper, to taste

1. Cook quinoa in water or broth until water is absorbed, about 10 – 15 minutes–or follow directions on package.

2. Heat oil in a skillet. Sauté the onion, carrots, and garlic until the onions are soft and just slightly browned. Add the greens, tossing to combine, and sauté until they have wilted and are tender, to your liking. Remove from heat. Stir in the quinoa. Add the balsamic vinegar, lemon juice, salt, and pepper. Mix all ingredients together. Taste, and add more olive oil, vinegar, lemon juice, and/or seasonings, if you think it necessary.
