The small amount of curry powder here just adds some spiciness–feel free to add extra for a more pronounced curry flavor; or use other spice mixtures.

1 medium onion, peeled and sliced
2 T olive oil
1 large apple, peeled or not
1/4 t curry powder, or to taste
1 bunch kale, stemmed and coarsely chopped
1/2 c water or apple juice
salt and pepper, to taste

1. Heat oil in a large skillet and sauté onion, stirring occasionally, for about 5 minutes. Meanwhile, cut apple into 1/4-inch thick wedges or dice. Add apple and curry powder to skillet and cook, stirring, for a couple of minutes.

2. Add kale and water or juice and cook, stirring occasionally, until kale is tender and most of the liquid has evaporated, 5 or so minutes. Season with salt and pepper and serve.
