This is so simple, yet so delicious. Try other fruits as well.

3/4 c sugar, or to taste
1/2 c (1 stick) unsalted butter, softened
1 c all-purpose flour, white or (white) whole wheat or a combination
1 t baking powder
pinch of salt
2 eggs
12 (or more) prune plums, halved and pitted
sugar, to taste
lemon juice, to taste
1 t ground cinnamon, or to taste, optional

1. Preheat oven to 350ºF. Have ready an 8-, 9-, or 10-inch spring form pan, or a pie plate, or an 8-inch square baking dish.

2. Cream the 3/4 c sugar and butter in a bowl, either by hand or with an electric mixer. Add the flour, baking powder, salt, and eggs. Beat well to combine.

3. Spoon batter into your preferred baking dish. The size will determine the length of the baking time. Place the plum halves cut side down on top of batter. Or, place them sideways–this way you can fit in even more plums. Sprinkle lightly with sugar and lemon juice. Sprinkle with about a teaspoon of cinnamon, if you like.

4. Bake for about an hour. If you’ve used a smaller diameter baking dish, start checking around the 45 minute mark. A tester inserted in the crust part will come out clean. Serve warm or at room temperature, with ice cream, whipped cream, sour cream…
