This is similar to Potatoes Anna, which is in our Recipe Blog. The big difference is that Potatoes Anna is made in a skillet whereas this galette is free form. One can make a large galette, or several small ones, so that each plate gets its own individual galette (I made individual galettes for a dinner party and they were a big hit.)

1. Preheat oven to 400ºF. Oil a baking sheet.
2. Slice potatoes as thinly as possible (a mandoline or similar instrument is really useful here). The amount of potatoes will depend on your needs–whether you’re making one large one or several smaller ones. You can slice a few at a time, arrange the slices, and slice more potatoes as required.
3. Overlap the slices on the baking sheet in a circle, again one large or several small. You’ll want to do around 8 layers or so. Every couple of layers, brush or spray with olive oil and sprinkle with some salt and pepper. You could also sprinkle with some dried herb or spice (paprika is good, as is rosemary, oregano…). Continue until you’ve done 8 layers. Brush or spray oil on the top layer as well as around the sides.
4. Bake for 40 to 45 minutes, until golden brown and crisp. The baking time will depend on the thickness of the slices. The larger galettes may take longer as well.
