You can prepare this the night before. Mix all the ingredients together in a pot, cover, and let sit overnight, refrigerated or not. It will cook much faster this way. If you do this method, you could also eat it without cooking in the morning.
3 – 4 fresh plums, pitted and chopped
1/4 c raisins or other dried fruit
2 c apple juice or cider
1 t cinnamon
1 c regular (not instant) oatmeal
salt, to taste
1. Combine plums, raisins, apple juice, and cinnamon in a small pot and bring to a boil. Lower heat and simmer for 5 minutes. Stir in oatmeal and salt and simmer until the juice is absorbed and the oatmeal is cooked to your liking. Cover and let rest for 1 minute or so. Serve with sweetener, dairy or other milk, yogurt or your usual additions.
