This is good as a condiment for roasted anything…

3 c chopped plums
1/3 c chopped (red) onion
1/2 c finely chopped cilantro
1/4 c finely chopped basil or mint
2 cloves garlic, minced or mashed to a paste
1 – 1 1/2 t finely chopped seeded fresh hot pepper
1 T lime or lemon juice
1 – 2 t sugar, or to taste
salt and pepper, to taste

1. Stir together all the ingredients. Taste for seasonings. Allow to sit for a bit, if you can, to mingle flavors. Taste again, and add more of any of the ingredients if you think it is needed.
